Varieties of microgreens - here are the most popular varieties: Broccoli - This is the superhero of the microgreen world. Teeming with the antioxidant sulforaphane, so much so, that they have 50 times more than their fully-grown adult counterparts. They're also a fabulous source of dietary fibre and protein, vitamins A, B, C, E & K, calcium, iron, magnesium, zinc and potassium. Not bad for a Teeny Greeny! Rocket - These little shoots are particularly rich in vitamin K and calcium, making it a key ingredient to boost bone health. This microgreen is also especially high in antioxidants. This microgreen packs a mild but peppery punch that is much like rocket salad leaves. Kale - Kale microgreens offer up a heft portion of minerals. This is a leaf that is loaded with goodness. In just one cupful you can enjoy well over the adult recommended daily allowance of vitamins A, C and K, giving significant benefits for both eye and brain health. Pak Choi - Pak Choi is a pale green microgreen with a slightly sweet, robust flavour. It is an absolute power green containing vitamins C and E and beta-carotene. Unlike many other fruits and vegetables, Pak Choi contains traces of the essential micro nutrient selenium, which helps certain antioxidants to work. These enzymes remove reactive oxygen species (free radicals) and so prevent oxidative damage to organs and tissues. Selenium also helps the hormone thyroxine to work which regulates your metabolism. Red Cabbage - Although it may be tiny in size, this microgreen packs a punch! The red cabbage microgreens are jam packed with fiber and folate, magnesium, manganese, thiamine, iron, calcium, potassium and vitamin K. For those suffering from disorders such as Crohn's disease, Coeliac disease, leaky gut and Irritable Bowel Syndrome, the amino acid L-glutamine in red cabbage has some welcomed news - it's capable of helping to heal the soft tissue that lines your intestines.
