Without doubt microgreens are the most healthy vegetables that you can eat and they have the added bonus of being able to easily grow them yourself. For me, this is a huge benefit as I can easily grow a batch of microgreens on a Sunday evening for me and my family to enjoy the following week.
Broccoli the king of microgreens as it has so many of your daily nutrients including Vitamin A, B, C and K. They are also a fabulous source of dietary fibre and protein. Broccoli is teeming with the antioxidant sulforaphane, so much so, that they have 50 times more than their fully-grown adult counterparts. Not bad for a Teeny Greeny!
One of the second most nutritious greens is Kale. Fully grown kale is somewhat of a superfood in itself but when growing this plant on a micro-scale, it is far more nutritious. This is a leaf that is loaded with goodness. In just one cupful you can enjoy well over the adult recommended daily allowance of vitamins A, C and K, giving significant benefits for both brain and eye health.
