Cauliflower & Potato Mash with Cumin Butter and Cabbage Microgreens

I made this side dish when I hurt my back. I was staring in the freezer for something easy to eat, but ultra processed food fills me with dread, so, to balance bring my meal back into some kind of balance, I added a pile of steamed veg and some tasty mash. Cauliflower and potato work well together, in fact, if you have children, cauliflower is pretty easy to hide amongst some creamy potatoes. I wanted something more exciting though, and something with little effort. The result was soft fluffy clouds of mash with middle eastern twist. What a dream.

Ingredients

  • 3 medium potatoes
  • 4 medium cauliflower florets
  • 2 tsp cumin seeds
  • 2 tbsp butter
  • Salt to taste

Directions

  1. Heat a frying pan and dry fry the cumin seeds until fragrant.
  2. Add the butter to the cumin seeds and melt.
  3. Mash the potatoes and cauliflower until smooth
  4. Add the cumin butter
  5. Season
  6. Top with Microgreens
