Carrot, Courgette and Leek Soup with Alfalfa Microgreens

I’ve been making this soup for years. It was an old Slimming World soup that kind of grew arms and legs, depending on what veggies I had left over in the fridge, this soup is great with a handful of peas for vitamin C, or some left over broccoli for iron. I’ve added cashew nuts in the past for a light creaminess, and asparagus that looks to bendy to steam. I never throw out useable veg and this soup welcomes it all. The end result will be a silky smooth and creamy soup, packed with flavour. Microgreens are a great topping as the texture and freshness of the plants compliment the smoothness of the final dish. I used alfalfa, but broccoli, kale, radish, cabbage, cress, garlic, or rocket would hit the spot. Or, just add a mixture.

I kept this recipe simple today because I didn’t have a lot of bendy, half eaten bits and bobs in the fridge, but I did add some extras like Nutritional Yeast and Marmite to really raise the bar. The umami gives the final product as satisfying mmmmmm.

Ingredients

  • 1 red onion
  • 1 small leek
  • 1 clove of garlic
  • 3 large carrots
  • 2 Large courgettes
  • 2 small celery sticks
  • 2 tbsp nutritional yeast
  • 1 tsp Marmite
  • 2 vegetable stock cubes
  • Half tsp white pepper
  • Tsp smoked salt flakes

Directions

(I use a soup maker but a pot will do)

  1. Peel and chop the onion and garlic
  2. Slice the leek
  3. Wash the carrots and top and tail, slice then dice
  4. Wash the courgettes, top and tail, slice then dice
  5. Wash and slice the celery
  6. Throw the veggies into the soup maker or pot
  7. Add the nutritional yeast, Marmite, salt and pepper
  8. Cover with stock. This only needs to be cover slightly as courgettes are full of water.
  9. Cook on a smooth setting for 30 minutes, or in a pot for 40 minutes then blend
  10. Serve with sourdough toast
